Sodium phytate is salt of phytic acid and sodium. Phytic acid, also known as myo-inositol 1,2,3,4,5,6-hexakis(dihydrogen phosphate), is a naturally occurring plant acid with 6 phosphate esters and 12 acidic hydrogens sitting on the periphery of a an inositol phosphate nucleus. This unique architecture makes phytic acid a unique molecule with 12 reversibly exchangeable protons that can be released. As a phytic acid salt, sodium phytate is a considered a natural, bio-derived chelating agent that can be used as a benign substitute for disodium and tetrasodium EDTA. As a chelator, sodium phytate binds important minerals such as zinc, calcium, iron, or magnesium. It improves shelf life of products by minimizing the undesirable discoloration and rancidity of products often caused by metals present in formulas. Sodium phytate works by chelating free metal ions. Sodium phytate is known for its antioxidant and anti-corrosive properties. Other possible applications include flame retardancy, rust remover, lubricant additive, preservative, antioxidant, phosphorous source, heavy metal removal agent, industrial plasticizer intermediate, biocompatible adhesive precursor, phytate hydrogels, etc.
